1kg of potatoes

1/3 cup desiccated coconut
3/4 cup stale bread
2 teaspoons finely grated lemon rind
2 egg whites
1 tablespoon low fat milk
4 perch fillets
1/4 plain flour
lemon coriander mayo
1/2 cup mayoonnaise
1 tablespoon finely chopped fresh coriander
2 teaspoons finely grated lemon rind
1tablespoon lemon juice.

step 1,
preheat oven to 22oc fan forced

step 2,
cut potatoes into 1cm thick. Place chips in single layer on baking paperspray with cooking oil rpast for about 40 minutes

meanwhile, combine coconut, breadcrumbs, and rind in bowl whisk egg whitesand milk in another bowl. coat fish in flour shake of excess. Dip fish in egg white mixture then coat in bread crumbs mixture. Place on baking paper. Spray with cooking oil. Cook for another 20 minutes

Combine ingredients for lemon coriander mayo in small bowl. Serve mayo with fish and chips.
